Making Easy Hemp Crisps Vegan, Low Carb, Keto | Super Healthy Recipe

One of my favourite super healthy snacks to take on the go! These hemp crisps (or crackers) are so easy to make and so deceptively delicious. Incredibly nutritious, full of fibre, protein and almost no carbs!

They’re versatile – you can change-up the seasoning to get the flavour you like – the most important thing is getting the ratio of flour, xanthan gum & water right!

– RECIPE –

THE BASE
4 TBSP Hemp Flour
1/2 TBSP Xanthin Gum
Optional – LSA or Flaxseed Meal 1 TBSP

SEASONING (My Favourite)
Nutritional Yeast
Turmeric
Chilli Flakes
Salt & Pepper

WATER
I don’t like to measure the water, as I add the water in tiny amounts and mix very well in between as the xanthan gum & flour start to stick as I do.
Be careful not to use a lot of water, you want to use your instincts till you get a nice, firm but pliable dough that sticks together nicely as shown in the video. Don’t over do it!
If you spill more water than needed, don’t worry, just add more hemp flour, and/or xanthin gum to help bind the mixture. You don’t want to have a lot of xanthin gum as you will end up with a soggy dough and a less firm final product.

ROLLING
Roll the dough into a thin sheet that’s at LEAST 1 mm thick. You don’t want a very thin sheet, as it would be hard to get off the baking sheet (or aluminium) after baking. If you decide to have a thicker sheet it would be like a cracker (not a crisp ;)), and might take longer to crisp in the oven.

BAKING
Preheat the oven to 175 °C, and bake between 20 to 25 mins. I check on the sheet when I see it has dried out, and make sure its firm and crisp by knocking on it before removing from the oven. Don’t let it burn or darken too ;). If you see big bubbles popping up, just tap them down as soon as they appear.
The crisp will start to crumble in shape as it bakes, that completely NORMAL. You will have to peel the big crisp off the aluminium before breaking into pieces by hand.
TIP- I tried not greasing the aluminium and it worked better to get the sheet (big crisp) off after baking.

STORING
I like to store the crisps in a sealed plastic bag so I can have an on-the-go snack!

PS – If you want to try placing a baking tray on top on the sheet as it bakes to get it flat, let me know how it turns out ;). I haven’t tried it myself!
